I've been using induction cooking for 12 years and love it. First an Iwatani, Japanese made then, now made in China. There weren't many choices in 2000. I paid $500.00 and loved it despite fan noise and nuisance of buttons that had to be pushed repeatedly to get the setting wanted. It went bad after several years, I contacted a repair service, got the part ($100.00), and the unit functioned again. I used it on a daily basis. Quit again after a number of years. I replaced it with an American-made unit made by a company that primarily manufactures for food-service companies. I liked the rotary dial to change settings, but the fan noise was still a problem, even worse than the Iwatani.When it quit a few weeks ago I looked to replace it locally and went to a restaurant supply where I found they were running a special on induction cookers. After reviewing the selection they had of six or seven makes, and seeing little difference among them (all made in China), I bargained with the salesman and bought the Update unit for $135.00. Mind you, that was bargained down from the initial quoted price (inflated) of $299.00.
I love this unit. It is quieter by far than the two previous units I had, going from a fan noise level that was barely tolerable to one that is actually sort of pleasant. This unit is even faster than the previous two, and more accurate when using the temperature settings (rather than the power settings). It does emit an electronic "cheep" if there's no pan on it and does this too on occasion with no apparent issue. All units I've used have that propensity, and, for me, it just blends in with my tinnitus so I hardly notice. The Update has a 1-year warranty; beyond that I have no idea of dependability, but my experience indicates a 5-year life is probably a reasonable expectation for any unit. Obviously I think induction cooking is the way to go. It's quicker and more responsive than conventional electric, and cooler and cleaner than gas (even though I cooked happily on gas for 50+ years).
