This press does what I want it to do, and it looks good doing it. I got the first one ever made, the proprietors of Homesteaders Supply were very demanding of their woodworker when it came to design and fabrication, so my wife bought one for my December birthday, and it wasn't delivered until April the next year. But now that the build details are up to snuff, they come out of the woodshop on time (and on target!) I visited the shop and talked to her about the press and how to use it most effectively. So much thought went into the design and construction, the press should be in the Smithsonian. As it turns out, you don't need drainage holes in the molds, and you don't need to know how much weight is being applied. The heavy PVC mold holds heat wonderfully, aiding in the knitting of the curds and in the syneresis of whey. Awsome, awsome, awsome. HS stands by its products too. I was standing there while the proprietress worked out a detail with the woodshop. If the press fails under use, they make it right. It shouldn't ever not work, but this one had an issue with the woodgrain, undetectable until you put the press through its paces. Bottom line is, this press does what it's supposed to do and it looks good sitting on your kitchen counter doing it.
